• 1 sheet vegan puff pastry – gluten-free is ok
  • 1 lb of your preferred finely chopped vegan sausage
  • 1 small onion finely chopped
  • 1T of finely chopped fresh parsley
  • Parsley sprigs for garnish


Step 1

In a medium pan over medium heat cook the chopped onion until translucent.
Now add the chopped sausage and cook until lightly browned.
Remove from heat and add your chopped parsley.

Set aside to cool.

Step 2

Roll out the pastry sheet well, then cut it into 8 rectangles. A pizza cutter works great for this!

Step 3

Preheat the oven to 400 degrees.

Add ⅛ of the sausage mixture at the short end of each rectangle of dough. Then, roll up each rectangle. When you get to the end, moisten it with a little water, to help it stick. Think of it like how you moisten an envelope to make it stick closed. (See images below)

Step 4

Stab the tops a few times with a fork or pointy knife, to let steam vent out during baking.

Step 5

Arrange the sausage rolls seam-side down on a parchment-lined baking sheet. Bake for 18-20 minutes, until the tops are golden brown.
Remove from oven and let cool.

Garnish with parsley sprigs and serve.
